What You’ll Need:
500 g cabbage

1 onion

1 carrot

50 ml vegetable oil

2 eggs

400 ml kefir (2.5% fat)

300 g flour

œ tsp baking soda

⅔ tsp salt

⅓ tsp ground pepper

1 tsp sugar

Steps:
Prepare the vegetables:
Slice the onion into half rings. Heat some oil in a pan and fry the onion until golden. Grate the carrot and add it to the pan. Let it cook until it softens. While the carrots are frying, finely chop the cabbage. Add the cabbage to the pan, stir well, and cover with a lid. Let everything cook for 5–7 minutes. Add salt and pepper to taste, then mix again.

Make the dough:
In a big bowl, pour in the kefir. Crack the eggs into the bowl, add sugar and a bit of salt, and stir everything well. Slowly add flour while mixing to make a thick batter. Then add the baking soda and stir again.

Combine everything:
Add the cooked vegetables to the batter and mix well.

Cook the pies:
Heat oil in a frying pan. Use a spoon to scoop the mixture and place each scoop into the hot pan. Fry until both sides are golden brown. What you get are fluffy, crispy fritters with a savory filling—perfect for a quick meal.
