I never really thought much about choosing eggs before. For me, the main thing was making sure the expiration date was okay and that the eggs were large—I didn’t like small ones. I’d just grab whatever was closest in the store without giving it much thought.
But recently, my mother-in-law opened my eyes to something important. She’s an expert baker, and when she visits, our family can’t resist her delicious treats.
One day, she asked me to buy eggs for her. On my way home, I picked out a pack as usual, checked the expiration date—everything seemed fine.
“Never buy eggs like these again, even if they’re on sale!” she said when I brought them home.
I was surprised, but then she opened the carton and pointed at the eggs. “See? Some are lying pointy-end up, and some are blunt-end down.”
