Homemade chocolate is something youâll want to eat every day! It has no sugar, no harmful additives, and no palm oil â just 4 simple ingredients and an amazing taste. You won’t find such treats in stores.
The taste of the chocolate depends a lot on the quality of the ingredients. I tried making the first batch with the cheapest cocoa I could find, and while it was decent, using better ingredients made a huge difference.
Milk powder also matters. I used regular cow’s milk powder, but you can try coconut milk powder too. Just keep in mind that coconut milk might make the chocolate a bit grainy.
As for the sweetness, dates are perfect. They add a light, natural sweetness. If youâre not a fan of dates, you can use figs, dried apricots, or prunes instead.
Hereâs what youâll need to make about 400 grams of chocolate:
– 100 grams of cocoa butter
– 120 grams of cocoa mass (or just 100 grams if you prefer)
– 80 grams of milk powder
– 3 dates
How to make it:
1. Measure the cocoa butter and cocoa mass, and place them in a bowl that you can use for a water bath.
2. Add the milk powder and warm everything over the water bath, stirring constantly.
3. Once the mixture is smooth and reaches a temperature of 50°C, take it off the heat.
4. Cool the mixture by placing the bowl in cold water until it reaches 27-28°C. Make sure no water gets into the chocolate!
5. Warm it up again to 40°C, then pour it into molds.
6. Let the chocolate set in a cool place (not warmer than 20°C) for a day. After that, you can store it in the fridge.
That’s it! You just melt, cool, warm, pour into molds, and wait for it to harden.
