A friend of mine, whose creativity and resourcefulness I’ve always admired, once shared an amazing idea with me.

She told me how she uses egg cartons not just to store eggs, but to create amazing little pies that have become a hit with her friends and family.

I was intrigued—it seemed so simple and clever that I had to try it myself.

First, I took a ten-egg carton and carefully trimmed off the parts sticking out at the top. It wasn’t hard to do.

Next, I prepared a large piece of baking paper. To make it fit better into the cells of the carton, I scrunched it up in my hand, soaked it in water, and squeezed out any excess moisture.

Then, I rolled out a sheet of puff pastry into a rectangle and laid half of it over the tray’s cells.

To make it perfect, I used a hen’s egg to make small indentations in the dough, adding a teaspoon of jam to each one.

For an extra twist, I diced a small apple and added it into the dough pockets.

After that, I took a raw egg, whisked it, and brushed it around the dough edges. I gently pressed the dough around the filling to form the pie shapes and cut off any extra dough.

I placed the lid of the carton over the pies and put them on a baking sheet. I repeated the same process with a second tray. Once everything was set, I put the pies in the oven, preheated to 180°C, and baked them for 30 minutes.

The result was simple, yet delicious.

Since then, I haven’t just kept egg cartons for fun; I now see them as culinary treasures that spark new cooking experiments and let me explore my creativity.
