Just One Egg and a Glass of Kefir — These Pies Are So Good, My Husband Can’t Stop at Ten

There are so many ways to make potato patties, but today I want to share one of my favorite recipes. If you follow it, you’ll end up with such tasty patties that your husband might just start carrying you around out of joy. Mine, for example, asks me to make them every other day — and eats 10 in one sitting!

Here’s what you’ll need:

For the dough:

– 200 ml of medium-fat kefir
– A pinch of salt
– 1 large egg
– 400 g of good-quality flour
– 1 tsp of baking soda

For the filling:

– 1 medium onion
– 300 g of potatoes
– 100 g of boiled sausage
– 50 g of butter
– Spices to taste
– Oil for frying

Let’s start cooking these delicious pies

First, peel and boil the potatoes until they’re soft.

In a bowl, pour warm kefir, crack in the egg, add a pinch of salt and the baking soda. Mix everything gently with a whisk. Slowly add the flour in parts until you get a soft dough. Wrap the dough in plastic wrap and let it rest on the table for a while.

Mash the cooked potatoes like you would for mashed potatoes. Dice the onion and sausage finely, then fry them in a pan until golden. Add them to the mashed potatoes. Drop in the butter, season with salt, and feel free to add some chopped herbs if you like.

Split the dough into two equal parts and roll each one out thin. To stop the dough from sticking, dust your surface with a little flour. Place the filling on one piece of rolled-out dough, leaving space around the edges (as shown in the original photo).

Now, place the second rolled-out sheet of dough over the filling. Press down the edges well with your hands. Make sure the filling stays in the center. This folding technique is often used to make restaurant-style ravioli.

Of course, you can also shape the patties into triangles or any shape you prefer — it’s completely up to you.

Fry the patties in hot oil until both sides are golden and crispy. And that’s it — your homemade potato patties are ready!
