Here’s what you need:

For the pancakes:

2 eggs
2-3 tablespoons of sugar
300 ml milk
A hint of vanilla sugar and a pinch of salt
200 ml boiling water
20 g cocoa powder
180 g flour
2 tablespoons of oil
For the cream:

700 g of thick sour cream
15 g of gelatin + 100 ml of cold water
120-150 g of powdered sugar
1 teaspoon of vanilla sugar
For the filling:

150 g of pitted cherries
250-300 g of canned peaches
For the chocolate glaze:

2.5 tablespoons of milk
100 g of chocolate
15 g of butter
How to make this dessert:

Pancakes:

In a bowl, whisk together eggs, sugar, vanilla sugar, and salt. Add a little milk and stir.
Sift the cocoa and flour blend into the mixture, stir well, then add the rest of the milk and boiling water.
Cover the batter and allow it to rest for 20 minutes.

Heat a pan with some oil and fry the pancakes on both sides.

Cream:

Soak the gelatin in water for 5 minutes.

Mix sour cream, powdered sugar, and vanilla in a bowl.

Warm up the gelatin until it melts, then slowly add it to the cream mixture.

Assembling the cake:

Place pancakes in small cups, fill them with a bit of cream and fruit, and wrap them into “bags.”

Line a 20 cm mold with cling film.Place a pancake at the bottom and spread a layer of cream on top, and place the pancake “bags” tightly.

Add fruits, pour the cream, cover with another pancake, and fold the edges.
Cover with plastic wrap and let it rest in the fridge overnight.

Chocolate glaze:

Gently melt the chocolate until smooth with milk and butter, mix well.
Drizzle the glaze over the cake and let it chill for ten minutes.
