  • Place the cream in the freezer for 30 minutes before whipping.

  • Gently shake the carton before use to keep the cream smooth and lump-free.

2. Whipping

  • Use a hand or stand mixer with a whisk attachment (an immersion blender won’t work well).

  • Start on low speed and gradually increase.

  • Cream with higher fat content whips faster, so 35% fat will be ready sooner than 33%.
